My youth group and I are having a party this Saturday. I haven't replied to any emails because I have had finals and essays all week. I'm totally done with this semester now...
I found two of my Wilton cake pans and my frosting tips. I'm thinking about making read velvet cake! Though I haven't found the recipe which I'm sure of yet...it just seems weird to just put red food coloring in a vanilla cake mix without a decent amount of cocoa. The red velvet cupcakes I've had before (the good ones), usually have a light chocolaty taste.
So what's the goal for this week???
Get some bigger cake pans, the ones I have are just too small.

Simple Omelet
4 oz white mushrooms, sliced
3 average size Eggs
1 Bulb of Brocoli (like one flower head?), just used the very greem flower part.

1 stick of string cheese, pull the strings apart
and few chops of green onion (optional)
Desired amount of butter or about 1/4 of a stick.
2 pinches of salt
Cook the veggies with butter until the mushrooms shrink a bit and it looks mostly cook (do not cook all way). In a bowl, mix salt, eggs, and the strings of cheese together. After mushrooms are done, pour egg mixture in. Eggs should cook about a minute on each side.

Cream cheese cookies and calms
My weakness are sweets: cupcakes, brownies, cakes... I'm always at a bake sale!
When I was little, I'd always bake cake, but I seldom do so now. I tried making tirimisu once and it turned terrible. I'm only good with store bought cake mixes. So I attempt once more to bake something different. I decided to back cookies! Not just your regular chocolate chip cookies, but jelly filled cream cheese cookies! They did not turn out like the magazine picture but my first batch was so deformed that I won't bother showing y'all. They are pretty tasty though! It was very easy to make, but the time for the dough to chill in the fridge and I only have one rack in the oven( that made it take longer.)
My brother decided to make clams tonight. He just threw minced garlic, white, whine, butter and Italian parsley in it.

Snow in Houston and Mayo Shrimp with Honeyed Pecans
These pictures where taken on Dec. 4th.
It actually snowed in Houston!
It did before, but never to this extent. Such a gift from God! I decided to take this shot of snow resting on the rose scrub's leaves.



You know what you need on a cold winter day?
Coffee.
Fast forward to Saturday... I made Mayo Shrimp with Honeyed Pecans. Yes, Pecans! My sister in law got a bunch from her brother's ranch while visiting him recently. I decided to use them instead of Walnuts. I've always like this dish, but never seem to like the Walnuts that accompanied it. I think pecans have a better texture and taste to it (for this dish the least).
So this is what it ended up looking like...


Looks yummy? Twas good for first attempt =)
